Tacos with Amaranth Microgreens
Serves: 4
Ingredients:
1 lb ground beef
Amaranth microgreens
1 box of taco shells
2 medium tomatoes, chopped
Sour cream
Shredded Cheese
2 cups shredded lettuce
Hot Sauce (If desired)

1 tablespoon chili powder
1 1/2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon ground paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
Instructions:
Add all seasonings for taco seasonings into a bowl and set aside.
Wash and chop up vegetables.
Heat skillet on stovetop to medium high heat.
Once skillet is hot, add ground beef.
Break up beef and add seasoning.
Cook beef until no longer pink, checking temperature to ensure it's fully cooked.
Drain left over grease. (We like to use paper towel to soak it up but be careful, the grease is HOT)
Prep taco shells per instructions on the box.
When finished prepping, add tacos to a plate separate plate.
Add beef, tomatoes, cheese, lettuce, amaranth, and sour cream to tacos as desired.
If you would like extra spice or flavor, add your favorite hot sauce as desired.
